Title: Lemon Meringue Pie/topping (WW 1970)*

Yield: 1 Pie

PIE FILLING
2cnLemon diet soda
2pkUnflavored gelatin
  Juice of 1/2 fresh lemon
15drYellow food coloring
  Artificial Sweetener*
  Grated rind of one lemon
MERINGUE TOPPING
1cnCream diet soda
1/3cPowdered non fat dry milk
  Artificial sweetener
  To equal 2 ts sugar
1pkUnflavored gelatin

Pie filling: Pour one can soda into a pan and heat to boiling. Combine the other can of soda and gelatin, add boiled soda. Add the juice of 1/2 lemon and the grated rind of the lemon. Add artificial sweetener*

* Sweetener to equal four teaspoons of sugar will keep the pie on the tart side. Use more sweeter if you want a sweeter pie)

Add the yellow food coloring.

Set in refrigerator to harden. After it fully hardens, put the mixture in a blender and whip until fluffy. Pour into 10 inch pie pan.

Have pie filling prepared

For Topping: Heat soda in saucepan, add unflavored gelatin - dissolve completely, add sweetener, powdered milk all at once. Mix well. Set in refrigerator to harden. After it is hard, whip the mixture in the blender until fluffy and pour on top of lemon filling.

Variation: Substitute two cans strawberry soda for the lemon soda, 15 drops of red food coloring for the yellow. Follow all other instructions. Just before pouring mixture into 10 inch pie pan, put fresh strawberries (whole or sliced) into pan and pour fluffy gelatin mixture over it.
